Banana pancakes

Looking for a healthy breakfast idea? Then you’re in the right spot! These banana pancakes are a firm favourite on our Beezee Families programme – for grown-ups and the little ones.
You just need a banana, a couple of baking ingredients, and then you can have loads of fun picking the toppings you fancy to go with it! We also love this recipe as it’s a great chance for you to work towards your five-a-day with plenty of fruit.

Ingredients
- 1 banana
- 2 eggs
- 1/2 tsp baking powder
- 4 tbsp porridge oats
- 1/2 tsp cinnamon
- Cooking oil spray
Optional healthy toppings:
- Fruit – blueberries, raspberries, strawberries, chopped
- banana.
- Nuts – flaked almonds, sunflower seeds, chopped hazelnuts.
- Sauce – honey, maple syrup, chocolate shot, Greek yoghurt,
frozen yoghurt.
Method
- Mash the banana in a bowl with a fork until it looks like a thick puree.
- Stir the rest of the ingredients into the bowl. For a smoother batter, you can blitz the ingredients together with a food processor.
- Heat a non-stick frying pan over medium heat and spray with some spray oil.
- Spoon some pancake mix into the pan, cook for 1-2 minutes on each side. (don’t forget to flip!), then tip onto a plate.
- Repeat the process with the remaining batter.
- Add the toppings of your choice and enjoy!
