Beezee berry pancakes

Pancake Day is around the corner, so it’s the perfect time to share our healthy berry pancake recipe. These are a firm favourite on our Beezee Families programme – for grown-ups and the little ones. No matter your age, it’s always a flipping good time making these!
While we love these with blueberries, you can swap them for raspberries if you like. The main thing is that you’re starting the day with fruit and tasty flavours.

Ingredients
Makes 8 healthy berry pancakes
- A few sprays of low-calorie spray oil
- 100g rolled oats
- 2 eggs
- 60g fat-free Greek yoghurt
- 2 tsp vanilla extract
- 1 tbsp honey
- 1/2 tsp bicarbonate of soda
- 200g blueberries (you can swap for raspberries if you prefer)
- Lemon zest (optional)
Method
- Add the oats to a food processor and blitz until a rough flour forms.
- Whisk the egg, yoghurt, vanilla extract and honey in a bowl.
- Mix in the oat flour, bicarbonate of soda, blueberries and lemon zest if using.
- Heat a few sprays of oil in a pan and spoon in a small amount of pancake batter.
- Serve and enjoy!
