Delicious Nigerian jollof rice

Nigerian jollof rice is one of West Africa’s most famous dishes, where the rice is boiled in a flavourful tomato and pepper broth.

Filled with vegetables and flavour, you can enjoy your jollof rice as your main meal – or serve it on the side with chicken and greens.

  • 5 medium-sized roma (plum) tomatoes – you can use a different type of tomatoes if you prefer 
  • 1 red bell pepper 
  • 2 Scotch Bonnet peppers (we used sweet pointed peppers) 
  • 1 medium-sized onion 
  • 4 tbsp of sesame oil (or groundnut oil) 
  • 5 tbsp of tomato purée 
  • 300g of partially boiled rice (we used long grain rice but it’s your choice!) 
  • 600ml of chicken stock (or vegetable stock) 
  • Curry powder 
  • Thyme 
  • All-purpose seasoning 

(Optional) Serve with: 

  • 300g tenderstem broccoli 
  • 200g fine beans 
  • Chicken 

1. Chop the tomatoes and peppers up.

2. Blend chopped tomatoes and peppers until smooth.

3. Chop the onion and heat up the oil in a medium-sized pot.

4. Fry the onion until it turns golden brown, then add tomato paste and fry together for 5 minutes.

5. Next add blended tomato-pepper mixture and keep it on medium heat for 30 minutes, stirring to make sure it does not burn.

6. Add chicken stock and all the seasoning and keep it on low heat, stirring for another 10 to 15 minutes.

7. Once the tomato-pepper stew is seasoned, add the rice and mix it well, add water if needed.

8. Cook it all together on low to medium heat adding water when needed for 20-30 minutes.

9. Once the rice is ready and it has absorbed all the liquid, cover it and let it rest for 10 minutes.

10. Your jollof rice is ready to eat! Serve it with steamed broccoli and fine beans.

Optional: 

You can also serve your Nigerian jollof rice with chicken leg. To do that, add your favourite chicken seasoning and bake your chicken in the oven at 200° for 25-30 minutes.
