Store cupboard Saag Aloo

Not done the weekly food shop yet? No problem! This quick and easy Saag Aloo recipe is made using mostly ingredients you can find in your cupboard.

Don’t worry if you don’t have everything in the recipe – we’ve included ideas for substitute ingredients at the bottom. 

Serve it as a side dish, or as a main with some wholegrain rice.

Serves 4

  • 1 tbsp olive oil 
  • 1 tsp mustard seeds 
  • 1 tsp cumin seeds 
  • 1 medium onion, diced 
  • 3 garlic cloves, chopped 
  • ½ inch ginger, chopped 
  • 1 large red chilli, deseeded and sliced 
  • ½ tsp ground coriander 
  • 1 tsp turmeric 
  • 2 medium tomatoes, diced  
  • 500g potatoes, cut into 2cm cubes 
  • 400ml water 
  • 250g Spinach

  • Heat the oil in large pan over medium heat.
  • Add cumin seeds and mustard seeds and fry for 1-2 minutes. 
  • Next the onion, garlic, ginger and chilli can be added to the pan.
  • Sauté for 1 minute. 
  • Add coriander and turmeric and sauté for a further 4 minutes 
  • Now add the tomatoes and potatoes along with 400ml water, or enough to just cover the potatoes.
  • Cover and leave to simmer for 15-20 minutes. 
  • Finally, add spinach and allow it to wilt.

Potatoes500g (drained weight) tinned potatoes – these are already cooked so skip adding the 400ml water and simmering – add the spinach and wilt, then throw in the tinned potatoes at the end!
