Sweet and sour tofu stir-fry

We’re back with another fakeaway recipe. Here’s our sweet-and-sour tofu stir-fry! It’s a balanced meal and includes at least one portion of vegetables. By using a no-sugar added sauce you’re saving over THREE cubes of sugar per portion. Plus, you’re not giving up any taste! This recipe is easily adaptable, and you can swap the noodles with rice, or substitute the tofu with a lean mean like chicken. Enjoy!

Ingredients
- 1 tbsp garlic
- 1 tbsp ginger
- 1 tbsp olive oil
- 2 portions of noodles (approx. 100-150g)
- 1 packet of stir-fry vegetables
- 1 jar of Uncle Ben’s sweet and sour no-added sugar sauce
- 1 pack of tofu (feel free to use any other protein source such as chicken!)
Method
- Add the garlic and ginger with 1 tbsp into a frying pan and heat for a couple of minutes
- Chop up tofu into cubes and add to the frying pan and heat until slightly brown on each side
- Add approximately the packet of stir-fry vegetables to the pan
- Add about half of the sauce to the pan and allow to simmer on low heat for a few minutes (also save the rest of the sauce for another day!)
- Make noodles according to packet instructions and add to pan
- Give a good stir to make sure everything is mixed in well!
