Veggie bean tacos

Any night is a great night for tacos! This quick and easy veggie tacos recipe is ideal for a healthy midweek dinner, and sure to be a hit with the whole family.

Get the kids to stand and stuff their own tacos to make it fun!

  • 1 tbsp olive oil 
  • 1 onion, finely diced 
  • 2 garlic cloves, finely diced 
  • 2 x 400g cans black beans 
  • 2 tsp ground cumin 
  • 1 tsp ground coriander 
  • 2 tsp paprika 
  • 2 tsp chilli powder 
  • 8 taco shells 

For the guacamole:

  • 2 avocados 
  • 1 red chilli 
  • Lime 
  • 1 garlic clove 
  • Coriander 

For the salsa:

  • 3 tomatoes 
  • 1 red chilli 
  • ½ small red onion 
  • Coriander

Additional toppings:

  • Charred sweetcorn 
  • Sour cream or yoghurt 
  • Hot sauce 
  • Coriander

  • Heat oil in a pan over medium heat. Add the garlic and onion and saute for 3 minutes. 
  • Add the drained beans and seasonings. Stir for 5-8 minutes until warmed, crushing some of the beans with the back of a spoon. 
  • Remove from heat and set aside.

To make the guacamole

  • Crush the garlic and mix with the coriander and chilli in a bowl. If you have a pestle and mortar, combine the ingredients into a paste. 
  • Add the avocados and roughly crush with a fork or pestle and mortar so that it is still a little chunky. 
  • Add the lime juice and stir through. Set aside. 

Simple salsa:

  • Mix all of the salsa ingredients together in a bowl. Set aside.

Construct your tacos:

  • Heat the taco shells according to packet instructions, stuff with your chosen fillings and enjoy!
